Ceylon cinnamon comes from the inner bark of the Cinnamomum Zeylanicum tree. It is light brown in colour and has a sweet, subtle and delicate flavour. Because of its sophisticated and mild aroma, Ceylon cinnamon is a highly valued culinary spice and often used in preparing fine desserts. Daily consumption of Ceylon cinnamon is recommended in blood sugar patients as this variety of cinnamon contains a very small amount of coumarin. Coumarin is a naturally occurring fragrant organic compound found in plants and can cause liver damage if consumed in large quantities regularly. Hence, low quantities of coumarin are the property of Ceylon cinnamon that makes it highly sought after. Ceylon cinnamon is more difficult to find as compared to Cassia cinnamon. Ceylon cinnamon requires a handcrafted process for harvesting and then rolling it into thin layers which make it an expensive option.

Cassia cinnamon also referred to as “Chinese cinnamon” comes from Cinnamomum Cassia plant. It is dark brown in appearance and has a pungent smell. It is also bitter in taste. Cassia cinnamon should not be consumed daily as it has a very high level of coumarin content. It can be harmful to the liver and kidney if consumed regularly. This is a relatively cheap variety of cinnamon and most commonly available in the market.
