The process of formation includes slight heating of the leaves to halt the process of oxidation, yielding green tea. Then they are left to oxidize for some time which lets them turn a little dark, yielding characteristics of black tea. The final version is semi-oxidized. The oxidation can range anywhere from 10 to 70 per cent.

How to prepare Oolong tea?

Prepared Oolong Tea Served in Cup

  • Makes sure that fresh, pure, cold-filtered water is used.
  • Depending on the styles of Oolongs, the steeping temperature and timing can vary as well. As a general rule, Oolongs are steeped at a temperature anywhere between 180 and 200 degrees and for a duration of 60 seconds to 3 minutes.
  • But in case, you don’t have an electric kettle or electrical appliance which allows temperature control, you must remember that at sea level water simmers at about 190 degrees and boils at about 212 degrees. You can get an idea of temperature by looking at the state of the water.
  • Most Oolong teas are designed to steep multiple times. Each steeping step unfurls the rolled or twisted leaves just a little more, revealing, even more, layers of the flavour profile intended by the tea master who created the tea. In fact, it is not uncommon to get 3 to 5 infusions out of a high-quality oolong.
  • However, you must ensure that you avoid over-steeping your oolong tea. Many oolongs are designed to taste best with multiple short infusions. Taste your tea after the recommended steeping time and then decide if you’d like it to steep a little longer.
  • Some of the Oolong tea comes with specific recommendations for brewing. If yours has any specific recommendations, use those. But using about 2 grams of loose leaf tea per 8 oz. cup of water should be a safe bet.
  • Cover your Oolong tea while it steeps to ensure that all the heat is kept restored in the steeping vessel.
  • Tea producers spend a lot of time mastering the art of Oolong tea. Hence, to best appreciate the handcrafted flavours of an Oolong tea, try sipping it plain without any additives like milk or sugar.

How does Oolong tea taste and smell?

Oolong tea has a mild taste owing to its partially oxidated state before being heated and dried. Green teas are dried immediately after picking and hence they tend to taste grassier and less complex than Oolong tea. Black teas, on the other hand, go through heavier oxidation hence they tend to be more bold and tannic. The delicate taste of Oolong tea makes it ideal for casual drinking. The caffeine level in Oolong tea is similar to the levels found in green tea.

The finest Oolong teas are said to produce an aroma like that of a ripened peach and many Oolong tea makers strive to achieve this result. In Taiwan, most premium Oolong tea tends to be very fragrant, with characteristics similar to green tea.

How should Oolong tea be stored?

Since Oolong tea is only mildly processed, its leaves are prone to natural enzymatic oxidation. Hence, it is recommended that it is stored in a cool and dry place in an airtight container. It is even suggested that refrigerating it can improve its taste however once refrigerated it must be stored that way as frequent changes in temperature can degrade its quality.

@Norma Olson,
Vitamin K is a naturally-occurring vitamin in the tea (Camellia sinensis) plant and the highest concentration are generally in Green and Oolong teas. Based on available studies we’ve read, one cup of brewed tea may contain approximately 0.6 – 0.8 micrograms (mcg). Herbal teas, also called Tisanes, do not contain significant amounts of Vitamin K as they do not contain any tea leaves from the Camellia sinensis plant. Hope this information is helpful.

Happy brewing :-)

I have enjoyed Oolong tea for many years along with several other teas. Currently I have a need to use a blood thinner which has caused me to control certain items in my regular diet that contain Vitamin K. Green tea fits into that category. Your description of Oolong says that it is neither green or black. Do you have any comments about the Vitamin K content, if any in Oolong? I like the information on your page especially the brewing and repeated brewing. Mahalo, Norma
